Back by popular demand! Kitchen Technique’s sourdough bread class offers an immersive, refined experience where participants explore the art of creating artisanal sourdough from start to finish. The class begins with an introduction to the foundational principles of sourdough, including the science of wild fermentation, the role of natural levains, and the importance of using premium, organic flours and grains. Under the guidance of experienced Chef John Bender, participants learn to cultivate their own sourdough starter, understanding the subtle balance of hydration, temperature, and feeding that fosters a healthy, active culture. The class progresses to the hands-on process of mixing, kneading, and folding the dough, with a focus on developing gluten structure and achieving the perfect texture. Students also learn the crucial steps of bulk fermentation and shaping, gaining insight into timing, dough handling, and creating the perfect rise.

The class delves into scoring techniques, allowing participants to create visually stunning, signature patterns on the bread’s crust. Throughout the class, there is an emphasis on artisan techniques, with tips for achieving a golden, crispy crust and a soft, flavorful crumb. By the end of the class, participants will leave with the skills and knowledge to bake their own high-quality sourdough loaves at home, elevating their baking to an artisanal level.
